New Culinary Concept at Severin*s on the Island of Sylt
While the German vacation island of Sylt has been preparing for spring and the upcoming peak season, Severin*s Resort & Spa has also used the time to revise its culinary concept.

Exceptional chef Nils Henkel, who is considered a pioneer of vegetable cuisine thanks to his flora and fauna menus, is newly on board at Severin*s. With creative Nordic menu creations on his back, he'll be responsible for the unpretentious and excellent Tipken's restaurant in future.

Pure Nature
The new "Tipken's by Nils Henkel" focuses on a symbiosis of maritime specialties and international influences, offering an exciting variation on Henkel's popular "Pure Nature" cuisine. Ancient species of vegetables such as the Ur-carrot (a darker version of the orange carrot) are on the menu. So is the best of land and sea, such as Arctic char with North Sea shrimp or pasture-raised beef. You can enjoy the menu that is specially designed for Tipken's either as a whole or á la carte. Vegetarians can rejoice: Since his focus is on sustainability and vegetables, the chef sees meat and fish more as a sensible accompaniment to the plant-based main dishes.

Nils Henkel is in charge of the overall concept of Tipken's and from time to time he will be visiting himself to personally present the changing menus to guests. On site, his long-time employee René Verse will be responsible for the daily implementation.
Restaurant or Gallery?
Just in time for the new culinary concept, Tipken's has also enjoyed a visual makeover. From now on, artist André Wagner's photographic works are responsible for the interior look.
