Castelfalfi, in the heart of Tuscany, is a special place. As a lifestyle resort within the historic walls of a medieval castle, it can look back on many centuries of history. The contemporary luxury hotel with its stylish, renovated rooms and villas extends over 2,700 hectares of gently undulating countryside. Hills, forests, vineyards and olive groves included. Recently, guests staying in the 146 rooms and seven villas have also been treated to a new restaurant. La Rocca takes fine dining to new heights.

Creative tasting menus

Of course, only a few will be able to enjoy them. This is because the new fine dining restaurant, which joins six other culinary establishments, only has 24 seats. These are in an exposed location at the highest point of the resort. It goes without saying that you'll encounter stunning panoramic views. But that's not all. Because from here, chef Davide De Simone serves up an exceptional culinary experience from Wednesday to Sunday.

One of these is The Tuscan Garden. This is a vegetarian menu inspired by the lush landscape of Tuscany. Guests can look forward to delicacies such as glazed asparagus with miso and white chocolate butter as well as risotto with blue goat's cheese and caraway seeds. The Sicilian chef has chosen spicy scents of distant lands as the basis of the menu.

The second menu is an ode to the Sicilian roots, the connection to the land and the cosmopolitan spirit of the chef. It's called My Own Country and is a culinary journey from the Mediterranean to Tuscany, with a detour to London. Smoked Tuscan sea bass with black tea and veal cheeks with red Mazara prawns combine tradition and innovation in the most harmonious way.

As rooted as the Sicilian's tasting menus are in his own biography, the menu is surprisingly international in practice. After all, Davide De Simone feels at home all over the world. He has already made a name for himself in the world's best kitchens and worked in some of London's most important restaurants for more than ten years. It was in this cultural melting pot that he developed his personal approach to fine dining. In future, the menus that La Rocca in Castelfalfi will be offering are innovative combinations of first-class ingredients.
