The quintessence of enjoyment
Both the cellar master and the head chef are masters in their field. Both strive for the absolute best. Fréchon, who is in charge of the Épicure restaurant at the Hotel Le Bristol, is often referred to admiringly by colleagues as Chef Royalty. His trademark is French cuisine of such a high standard that guests come especially for it.

And Vincent Chaperon? He has been with Dom Pérignon since 2005. After a thirteen-year apprenticeship, he became cellar master of the house in 2019. Every year, Chaperon now surprises with vintage champagne creations that take up and continue the creative heritage of the Maison. Together with Fréchon, he has now created the Dom Pérignon Champagne Dinner at Le Bristol Paris.
Perfecting the taste
This kicks off in the beautiful bar. As an exception, aexceptional cuvée, which is normally only available by the bottle, is served by the glass on this occasion. The two hosts invite their guests to take part in a dialog in which the two worlds - champagne and French haute cuisine - meet.

At the table, a menu is served that has been carefully composed down to the smallest detail. Notes of Caviar de Sologne meet roasted turbot with white truffle. Dom Pérignon sets the pace. Among other things, with a Vintage 2013 and a Vintage 2004 Plénitude 2. The highlight is a crème glacée of black truffle with hazelnut emulsion and gianduja chocolate. It's accompanied by Dom Pérignon Vintage 2002 Plénitude 2.
