High cuisine in Mallorca: Is this Palma's best veggie restaurant?
An Austrian chef is shaking up the Mallorcan gastro scene: the Fera restaurant serves international cuisine at the highest level and for all tastes.

A noble palace in the heart of Palma's old town is the stylish stage for Simon Petutschnig's creative international cuisine - a skilful mix of Mediterranean and Asian components. Since 2017, the Carinthian-born chef has been head chef and co-owner of the Restaurants Fera right in the center of Palma de Mallorca. Fera is the perfect place for relaxed lunches, fine dining or a casual drink at the bar.

When the weather is nice, the enchanting garden also invites you to enjoy Petutschnig's dishes. He and his team pamper Mallorcan and international visitors with finely composed tasting menus as well as refined à la carte dishes, such as Simmental beef with crispy nori seaweed, truffles and olive oil - and, of course, a handpicked selection of fine wines.

Exoticism meets organic
Despite his success, Petutschnig has not forgotten his Austrian roots. In addition to international ingredients, the Carinthian gourmet relies primarily on high-quality organic products from Mallorca. Among them is the Demeter-certified olive oil Son Naava from the best Arbequina olives or the full-bodied salt flowers Flor de Sal from the nature reserve on the dreamlike beach Es Trenc in the southwest of the island. Wine lovers can look forward to, among other things, good droplets from small Bodegas . Biodynamic wines, which the Mallorcan eco-winemaker Carlos Feliu presses especially for the Fera restaurant, also shine in the glasses.

A treat from the sea
Meat and fish lovers will enjoy the "Chef's Menu". This includes, for example, seafood such as the famous gambas from Sóller with scallop, curry and lemongrass; Gillardeau oysters with caviar and wasabi a rendezvous; and sea bass with seaweed, beurre blanc and a touch of dashi, the Japanese fish broth with the stunning umami flavour. It is these Asian notes that Simon Petutschnig loves to combine with Mediterranean delights.

Vegetarian delights in the restaurant Fera
The guests who eat a plant-based diet need not feel disadvantaged in any way. The friendly chef offers them an opulent menu. To start, for example, he serves fine beet with raspberry, goat cheese and ponzu, the spicy citrus sauce. This is followed by an eggplant pâté with wakame, quinoa, and kale, to then delight the palate with small carrots complete with tamarind, curry, and lemongrass.

This is followed by baby corn with polenta, sweet potato and mirin onions, before the almond miso praline with caramel, apricot and vanilla forms the sweet conclusion. For Petutschnig, incorporating the demands of vegetarians into his menu design comes naturally. His plant-based creations are also becoming increasingly popular with diners who are not exclusively vegetarian. Even if you usually like to eat meat, you won't miss it at all with these delicacies.
