Tyrol's gourmet hotspots: Narrischguat's Fab 6

The foodie scene in Tyrol is ever-changing: who has a new menu, which restaurant is hot now? Our author Anna Lang, better known on Instagram as Narrischguat, has picked her top six restaurants this season.

1. Bistro Secco Schwarzer Adler

French bistro feeling in the charming town of Hall in Tirol! Johannes Nuding is one of the big names in the gastronomy scene: after a stellar career abroad, most recently as head chef at London's glamorous "Sketch", he returned to his homeland and now runs the "Schwarzer Adler". In addition to the fine-dining restaurant, you can enjoy the bistro menu in a casual, rustic ambience of the "Secco" and treat yourself to the perfect bottle of wine. The quiche with organic celery, sunflower seeds and gray cheese is a dream, as is the French guinea fowl marinated in buttermilk with pointed cabbage and orange mayonnaise. An absolute must is the inconspicuous-looking poppy seed and saffron lemon cake, which is intense and full-flavored. The combination of regional products and French cuisine makes for a successful concept with a fun factor.

2. Spitzbuam

For the two 28-year-old protagonists, the name says it all - "Spitzbuam" means "Rascals" in the local dialect. Chef Florian Straif, has a great fondness for classic French cuisine with an Asian influence and conjures up a wonderful tuna tataki with cucumber pearls marinated in sushi vinegar, combined with a buttermilk-coriander oil vinaigrette and black garlic. The chicken galantine with tom kha gai flavors and crispy chicken skin is great. Sommelier Peter Wahrstätter takes care of the wine pairings with his well-stocked cellar.

3. S'Kammerli

S'Kammerli in Nauders am Reschenpass is a very personal fine dining concept with just twelve coveted seats. Junior chef Michael Ploner and his chefs Oliver Mijic and Jürgen Mathoy let their culinary imagination run wild here. There is no classic menu. The dishes are presented in caricature form. You dine in a 500-year-old parlor. The gourmet spectacle starts with the first course, which is served by the entire kitchen crew. Each course is a visual and tasteful work of art – from the sourdough bread course with liquid malt to the venison tataki with spruce, celery and pistachio to Grandpa Ploner's Tyrolean Paunzen and ice cream. Traditional dishes with creativity and outside the box.

4. studio Freund-schafft

The location of the "Panorama Royal" hotel is lovely, as is the fine dining restaurant it hosts: every Friday, chef Markus Freund serves up culinary delights in a 16-seat dining room. Together with second chef Reinhard Klingler and patissière Andrea Weidenauer, they regularly work on new 8-course menus. The cuisine is characterized by craftsmanship and simplicity, with influences from all over the world. The Romaine lettuce from the Green Egg with caramelized whey has established itself as a signature dish. The Iberico pork is combined with a fine Tristan langoustine and mango, while the duck is served classically with red cabbage and Jerusalem artichokes. To finish, there is pear á la helene.

5. Schwarzfischer

Around 500 years ago, Emperor Maximilian decreed the sustainable creation of fishponds in the Tyrolean Oberland, where the "Schwarzfischer" restaurant and fishery has been located in Stams since 2023. Maria, Fabio and Töna had already developed their own restaurant concept during their (non-gastronomic) studies – the opening of the "Schwarzfischer" followed in mid-April last year. With cooking experience from the Belgian Michelin-starred scene, marketing know-how and a passion for fishing, the three of them have successfully countered the old image of an Austrian fish restaurant. They surprise with variations of Steckerlfisch (fish on a stick): grilled, with lentils, sweet and sour pumpkin, brown butter espuma, as a consommé or baked in brioche bread - but a classic Trout Müllerin is also a must on the menu. The joyful motto is "Delicious from head to fin"!

6. winery Fiss

The heart of this restaurant is located in the cellar of a former sporting goods store in Fiss. The enterprising young restaurateur Lukas Pregenzer is hoarding an impressive treasure trove of over 400 wines here. 80 % of the bottles come from Austria, supplemented by Italian, French, Spanish and Israeli wines and other exotic varieties. Chef Erik takes care of the culinary delights – he uses produce from farmers in the region. From the classic snack platter to their signature dish of marmot ravioli with mountain cheese foam and chives, the focus here is on pure taste without frills.
